Lebanese: Fattoush Salad

(serves 6)
Ingredients:
- 3 pita bread rounds, cut into pieces and baked
- 2 heads of romaine lettuce (or 1 head of romaine and another of any other kind of lettuce that you like)
- 1 tomato, cut into bite-sized pieces (or a bunch of cherry tomatoes, whole or sliced in half)
- 1 cucumber
- ½ green bell pepper
- ½ red bell pepper
- small bunch of fresh parsley, chopped
- small bunch of fresh mint, chopped
- 1 bunch of radishes, sliced (optional)
- 1 pomegranate, seeded (optional)
- 1 teaspoon of sumac
For the dressing:
- Juice of 1 lemon
- ⅓ cup olive oil
- 1 tablespoon red wine vinegar (or white vinegar)
Procedure:
- Preheat the oven to 400 F, put the bread pieces on a baking tray and bake for about 7 minutes (until lightly golden brown)
- Make the dressing: Mix all ingredients well
- Cut the lettuce and all the vegetables into small even-sized pieces
- Pour dressing over salad, mix in the toasted bread and toss well
- Garnish with sumac and pomegranate seeds
